Four ways to use açaí powder.

Freeze-dried açaí is pure fruit without the water. Two spoons replace a frozen pulp pack. Here is how we use it — from the thick bowl to the way it is eaten in the river towns.

Thick açaí bowl

The classic. The trick is frozen fruit and very little liquid, so it stays thick enough to eat with a spoon.

You need

  • 2 tbsp (about 12 g) freeze-dried açaí powder
  • 1 frozen banana, in pieces
  • 100 g frozen berries
  • 60–80 ml milk or plant milk — add slowly
  • Toppings: sliced banana, granola, coconut flakes, a few berries, honey

How

  1. Put the frozen fruit, the powder and half the milk into a strong blender.
  2. Blend in short bursts, pushing down with the tamper; add milk only a spoon at a time.
  3. Stop as soon as it is smooth and thick like soft ice cream.
  4. Spoon into a bowl and scatter the toppings loosely over the top.

Açaí smoothie

Thinner than the bowl, ready in three minutes.

You need

  • 1 tbsp (about 6 g) freeze-dried açaí powder
  • 1 ripe banana (fresh or frozen)
  • 200 ml milk, oat drink or coconut water
  • A handful of ice
  • Optional: a teaspoon of honey or a few dates

How

  1. Blend everything for about 30 seconds.
  2. Taste: açaí itself is barely sweet and slightly earthy, so sweeten with fruit if you like.
  3. Pour and drink straight away — the colour is deepest when it is fresh.

Açaí the Amazon way

In the river towns of the Amazon, açaí isn’t a sweet breakfast. It is eaten thick and unsweetened, with toasted cassava flour (farinha) — often next to fried fish or shrimp.

You need

  • 3 tbsp (about 18 g) freeze-dried açaí powder
  • 120–150 ml cold water
  • 2–3 tbsp farinha d’água or other coarse cassava flour
  • Optional: a pinch of salt, or a little sugar if you prefer it the southern way

How

  1. Whisk the powder into the cold water until it is thick and glossy, like a dense purée.
  2. Spoon into a bowl and sprinkle the farinha on top just before eating, so it stays crunchy.
  3. Serve plain, or the way many families do: next to fried fish.
